Teriyaki Mahi Mahi Salad!

Salads, Salads, Salads! I am on such a salad kick lately, but that is because there are so many great combinations that taste so good! Why stop experimenting? I came up with this salad when I decided to make my own Asain Salad Dressing and I needed a salad to go with it! I had just gotten some super fresh Mahi Mahi from Bay Park Fish Co, and so, a salad was born. If I may toot my own horn, I will say this salad was fantastic! Nothing makes a salad tastier than really fresh fish.
For the Mahi Mahi, I just put a store-bought Teriyaki Marinade on it and threw it in the oven at 375* for 10-15 mins. Stay tuned for an attempt at my own Teriyaki sauce, it is on my to do list.

Asian Dressing:
3 Cloves Garlic, minced
1 Tbsp Fresh Ginger, minced
1/2 cup Extra Virgin Olive Oil
1/4 cup Sesame Oil
1/3 cup Rice Vinegar
1/4 cup Low Sodium Soy Sauce
2 Tbsp Honey
1 Tbsp Toasted Sesame Seeds
In a 1 pint glass jar or larger, combine all ingredients. Cover the jar with a tight fitting lid and shake well. Remove lid, and heat jar in microwave for 1 min just to dissolve the honey. Let cool and shake well before serving. Store covered in refrigerator.

Salad:
1/2- 1 cup Spinach
1/2 - 1 cup Mixed Greens
Handfull of Cashwes
Handfull of Raisins
1/4 Red Bell Pepper, chopped
1/4 cup Shredded Carrots
Combine everything and enjoy!
